Ideal serving temperature for red wines
In general, red wines should be served slightly below room temperature. Excessive temperature will accelerate the oxidation of phenolic substances in red wine, and the aroma substances will volatilize too quickly, losing its strong taste and unique aroma and flavor. Temperatures above 18°C are enough to lose the flavor of most red wines. Therefore, the serving temperature of red wine is rather low than high. Because the temperature is slightly lower, red wine can be warmed by the temperature of the palm.

Depending on the style of wine, different red wines are served at different temperatures. Light-bodied, fruity red wines such as Beaujoulais have a lower serving temperature, around 13°C; while those medium-bodied red wines such as Chianti, Noir Pinot Noir and Zinfandal are served at a slightly higher temperature, around 16°C; full-bodied red wines such as Bordeaux, Cabernet Sauvignon, Merlot And Shiraz wines are served at a higher temperature of 17-18°C.
Ideal serving temperature for white wines
For white wines, a slightly higher serving temperature can release the wine, revealing its natural fruity aromas and mouthfeel. Too low a temperature can imprison the original aroma and flavor of the white wine. However, white wines are still very cold relative to the ideal serving temperature for red wines.

The ideal serving temperature for most white wines is 10-13°C, depending on the style of wine. Rieslings, on the other hand, are served cooler than Pinot Gris or Chardonnay. Given that the temperature in most refrigerators is around 4-7°C, it is recommended not to drink white wine straight from the refrigerator. You can take it out 30-60 minutes before opening and let it warm up naturally, or you can warm a cold white wine by the temperature of your palm. If it is a white wine stored at room temperature, it should be placed in the refrigerator or ice bucket 30-60 minutes in advance to cool down.
Ideal serving temperature for sparkling wines
The ideal serving temperature for sparkling wine is lower than that of white wine, generally around 7°C, so you can enjoy a sparkling wine straight from the fridge, but chill it for 15-20 minutes before serving Its flavor will be better.
Ideal serving temperature for fortified and dessert wines
Due to the complexity of the styles of fortified and sweet wines, the temperature at which they are served varies widely. In general, light, fruity, young wines should be served at a slightly lower temperature, while older, heavier, more complex wines should be served at a slightly higher temperature. The serving temperature of general fortified wine is 17-18 ℃.
