Whether it's a regular wine or a good vintage, once you've chosen it, all you need is to fully discover its essence and enjoy it. Knowing some wine tasting knowledge will definitely help to improve your wine tasting ability. In serving wine, the most important knowledge includes the temperature of serving wine, the choice of glass, and attentive service.
1. Serving temperature
Never drink a bottle of wine immediately after taking it out of the cellar. Before tasting or using it for meals, you should calculate how long it will take to refrigerate the wine. The temperature of serving wine is not as high as possible, nor as low as possible. Too high or too low will make the wine lose its original flavor. Only at the right temperature can the flavor of the wine be fully developed.
In general, white wines should be served at a lower temperature than red wines. But the serving temperature of different styles of wine can vary widely, and each style has its own optimal serving temperature. If you want to know the best serving temperature for different wines, please pay attention to the "ideal serving temperature for wine" on this site.
At present, there are many wine refrigeration technology products with temperature control function, such as wine cabinets and refrigerators. Of course, the quickest way to chill wine is to put it in an ice bucket and add water and ice to it. If you need to chill a bottle of 20°C wine to 8°C, you have to wait 10-15 minutes. A thermometer would be a nice tool during chilling, but a difference of 1-2°C doesn't make much difference to the wine. At the beginning, you can use a thermometer to measure 2-3 times and feel the iceness of each bottle. After you have enough experience, you can judge the iceness of a bottle of wine by your own feeling.

2. How to open wine?
1. Use the knife in the bottle opener to make a circle under the leak-proof ring (the circle-shaped part protruding from the bottle mouth) to cut off the bottle seal. (Be careful not to scratch your fingers from the sharp metal film.)
2. Wipe the mouth of the bottle clean with a cloth or paper towel.
3. Align the corkscrew tip with the corkscrew tip and rotate into place.
4. Slowly remove the cork.

3. Sober up
Most wines are drinkable right out of the bottle, but some wines gain more energy through decanting. Through decanting, wine can be improved in two ways: 1. Remove the brittle and bitter sediment formed on the bottom of the bottle due to aging; 2. Let the wine come into contact with the air, and after the wine "breathes", the tannins are fully oxidized , the miscellaneous and peculiar smells on the surface volatilize and dissipate, and the floral and fruity aromas of the wine itself gradually emerge.
If it is an older wine, decanting can make it "wake up" quickly. But both old and young wines can be decanted. Generally, after 1-2 hours of decanting, the taste of the wine will be softer and fuller. It should be noted that do not pour the wine into the decanter quickly, otherwise it will easily lose its freshness.
How to sober up? it's actually really easy. First, keep the decanter clean. It is recommended that you pour a little wine into the decanter before decanting, so that the detergent or other odors can be cleaned up. Then, open the wine and pour it slowly into the decanter.
Fourth, the order of serving wine
The order of serving wines is white, then red; young, then old; light, then full; dry, then sweet; and lastly, the very good, very special wines.
If you are the host, you should inspect the wine for defects before serving it. When serving wine, the lady takes priority and then pours the others clockwise from the owner.
5. Pour wine: how to keep the wine from leaking?
Slow down! When the amount of wine poured into the wine glass meets the requirements, keep your body slightly away, rotate the bottom of the wine bottle slightly, and quickly close the bottle to avoid dripping wine. It's also a practice that makes perfect, so after a while of honing it, it's a breeze to pour the wine without it leaking. Also, keep a white cloth in your hand and wipe the wine bottle at all times.
6. How much wine to pour?
Depending on the size of the glass, a 750ml bottle of wine can reach 6-12 glasses. In order to fully enjoy the wine and food, each cup can be poured into 150-180ml, which is one third of the cup. For sparkling wine, you can pour it up to three-quarters of the way through the tulip glass until you see bubbles appear.

7. How to choose a wine glass?
Before serving wine, prepare suitable wine glasses and double check that the glasses are clean. When choosing a wine glass, the factors you need to consider include: the shape, size, quality of the wine glass, and ensure that the wine glass is clear and bright. In Europe, especially in France, each region has its own style of wine glass, such as Bordeaux glass, Burgundy glass. If you need to taste sparkling wine, you need to prepare a tulip glass or flute glass. The wall of the wine glass is buckled inward, which helps to gather the aroma and is conducive to smelling the aroma. In addition, the legs of the wine glass should be long enough to avoid touching the body of the wine with fingers and affecting the temperature of the wine.
8. How to hold the cup?
Use your thumb and forefinger to clamp the legs of the cup, be careful not to hold the cup directly, because it is easy to make the temperature of your hand affect the temperature of the wine. When toasting and clinking glasses, when your glass body is slightly lower than the other person, it shows your respect for the other person. Never drink while drinking, but tilt the glass and drink as if you were putting the wine on your tongue. Gently shake the glass to allow the wine to come into contact with the air to enhance the aroma of the wine, but do not shake the glass violently.
